Tasting Notes: The Santa Vittoria Vin Santo is amber honey in color, it has a vibrant, intense and pleasing aromas of dry figs and almonds. The palate is velvety and persistent with a hints of candied fruits, nuts and a multi-facted richness.Trebbiano and Malvasia grapes are slowly dried in the attic of the winery with the windows open, allowing for good ventilation and the perfect conditions for the noble rot of botrytis to form. There the dried grapes remain for 3 to 4 months, before being aged for 4 to 6 years in small wooden barrels called Caratelli.
