Tasting Notes: Sourced from the 80-year-old Ca' Cavorgnan vineyard in Cormons, this wine comes from organically grown Friulano vines planted in stony "ponca" soils of sandstone and marl. Fermented in two old barriques and aged on full lees for 8 months before a 12-month bottle rest. Offering a richer and more complex texture than the base Friulano. This wine is loaded with notes of citrus peel, ginger, wet stone, and subtle hint of flint. The finish both spiced and bright giving the wine balance and dryness.
Estate History: The Sirk family, originally from Slovenia, has called Cormons home for over 50 years. Known for their Michelin-starred restaurant and world-renowned hotel, La Subida, the family’s roots in Friulian hospitality are legendary. Vineyards that once lay dormant under the care of relatives were reclaimed in 2003, initially for vinegar production. Mitja reignited the family’s winemaking legacy in 2016, focusing solely on Friulano to honor the region’s identity.
