Tasting Notes: With her Jungimmune Bianco, winemaker Sonia Gambino has crafted one of Etna’s most unique field blends. This is a selection of old Grecanico Dorato, Minnella, Albanella and Moscatella vines, all sourced from Etna’s remarkably high elevation Maletto cru. The grapes are fermented together, spending three days on the skins. The wine ages on its lees for ten months; it rests for another six months in bottle before release. Notes of bruised golden apple, fleshy yellow peach, wet stones, sea salt, jasmine, and chamomile.

Estate History:  Born in Bronte, Sicilia, but raised in Milan, Sonia Gambino graduated from the University of Gastronomic Sciences in Pollenzo in Piedmont, where she developed a passion for wine. Inspired by legendary winemakers such as Maria Teresa of Bartolo Mascarello and Giovanni Canonica, she moved to France and graduated from the Montpellier University of Viticulture. Sonia was soon hired by Chateau Lèoville Las Cases, the famous Bordeaux estate, where she remained for a year in the role of assistant winemaker. After some time in Chile, she returned to Italy, where the call of the vines brought her back to her family home in Maletto, an isolated village on the western side of Mt. Etna. Working from a mestizo vineyard, where Nirellu, Granazzu, Minnella, Grecanico Dorato, Grenache and “nu sacciu” (Sicilian, for I do not know) coexisted. Sonia began to make her wines, pressing the grapes using the millstone she discovered in her grandfather’s farm.
