Tasting Notes: The Cerruti Fol is an white wine produced with Moscato grapes that undergo spontaneous fermentation and maceration for 5 days on the skins, followed by 12 months aging in steel tank and concrete vats. It is not filtered, with a dry palate and a complex nose of exotic fruit and fresh herbs.
Estate History: Ezio Cerruti's company is located in the heart of the Moscato d'Asti area exactly in Castiglione Tinella in the province of Cuneo, between 350 and 400 meters above sea level. The vineyards of Ezio, for a total area of almost 7 hectares, host a single grape variety, Moscato bianco (we are in the heart of the DOCG, and the original nucleus dates back to the early twentieth century, when the family cultivated and produced Muscat) cultivated without the '' use of herbicides or systemic products; only copper and sulfur are used. All operations from pruning to harvest are done manually. The soil is not moved except in the first years after the planting. The containment of the grass takes place through shredding and mowing. Ezio after years of experiments has focused solely on the production of Moscato Passito. In 2018, at the urging of his friend Beppe Rinaldi, he began to take an interest in freisa, a grape he has been transforming for some years now.
