Estate History: Little City Vermouth is the culmination of 83 different recipes which tested 119 unique botanicals and 6 grape varietals using 3 methods of botanical extraction. Basically, an obsession. Will Clark had a seemingly simple method: research all the ways vermouth had been made over the centuries and every ingredient that had been used, then take the best parts.
Limited by the size of his Harlem kitchen and the (il)legality of building a still in one’s bathroom, he honed in on a preferred process and botanicals. The sweet was aimed at bridging the gap between a vermouth worthy of sipping on its own and something big enough to stand up in a cocktail--it is spicy, juicy and bitter. The dry is more delicate. Less oxidized than a traditional European style, it’s an effort to invite people into the world of vermouth.
After finalizing his recipes, Will Clark teamed up with Finger Lakes Distilling to bring his vermouth to the public. Supporting their belief in creating products that are distinctly of the place where they are made, Little City Vermouth uses only New York State grapes. And, so far, it is only available in New York State.
