Tasting Notes: Cuvee Nature, formally known as Ombra, is the perfect entry into one of Italy's up and coming sparkling wine producers. This blend of 80% Chardonnay and 20% Pinot Noir is fermented with natural yeasts in tonneaux (large oak barrels), followed by a second fermentation in the bottle. Spends 30 "moon cycles" (approximately 2.5 years) on the lees in cement tanks after bottling. Nicola Gatta uses lunar cycles to time the aging process. Aromas of honey and pear, with a palate of lemon zest, apple, red currant, and minerals. Some also note a bruised apple/cider-like quality and a refreshing, dry finish.
