Tasting Notes: This is not a wine you are likely to ever see again, with perfect fill levels, from a legendary producer, and what was by all accounts one of the great vintages for the Veneto.
Quintarelli’s Valpolicella Classico Superiore is set apart from its peers by its extensive aging and complex winemaking process. Half of the grapes spend four days macerating, extracting color, tannin and flavor before undergoing fermentation in stainless steel tanks; the other half spend two months drying, until they become partially raisinated, before beginning fermentation. The wines age until February, when they are racked–the winemaking term for transferring into another container–over the leftovers of Quintarelli’s Amarone. This begins a secondary fermentation called ripasso. After the secondary fermentation is complete, the wine is racked once more into the estate’s famous botti. This is the pinnacle of Valpolicella Classico.
