Tasting Notes: The first vintage of Ciavolich Fosso Cancelli was in 2007 and was born from the strong desire to make a great artisanal and traditional Montepulciano wine. This wine reflects the ancient soul of the winery and restores a well-defined historical moment from the history of Montepulciano D’Abruzzo: fermentation in concrete. The name recalls the ditch that marks the vines from which are selected and harvested the grapes of Montepulciano. These are the most ancient vines from the Loreto Aprutino area. The grapes after being selected and handpicked are crushed in ancient press and the must is transferred to concrete tanks. The fermentation takes place spontaneously through native yeast without temperature control. At the end of the fermentation the decoupage is done, the wine is left to rest for one year in concrete tanks where it ferments. Following that the wine is bottled where it ages for almost three years.
Estate History: Originally wool merchants from Bulgaria, the Ciavolich family took refuge in Miglianico in 1560 after the Caracen invasion. After tumultuous years and the loss of the ancient underground winery, the family inherited the 50 hectare estate of Loreto Aprutino. It was here that Giuseppe Ciavolich first planted Montepulciano, Trebbiano, and Cococciola. The winery is now overseen by Chiara, the newest generation of Ciavolich, whose mission is to tell stories through her wine.
