Tasting Notes: Sottobanco is made from 100% Procanico grapes and spends at least 3 days on the skins giving it a beautiful golden hue. Notes of honey crisp apple skin, camomile, and saline are all found in this bottle but are all kept balanced to give it a fresh and fruit forward feel.
Estate History: Andrea Occhipinti is a winemaker working in Lazio with native grapes of the region, the red grapes Aleatico - thought to be related to Moscato - Grechetto Rosso, and the white grape Procanico, aka Trebbiano Toscano. Aleatico was traditionally made into sweet wines, since it has a bright berry palate and soaring aromatics. Andrea went a different course, noting that when the wine is vinified to dryness it shares much of the same qualities as Sangiovese. Working his 4 hectares of organic vineyards planted on the volcanic slopes of Lake Bolsena, Europe's largest volcanic lake, Andrea crafts lifted, elegant reds, distinct and elegant rosato, and an authentic and unique white wine. These are peerless and perfect spring wines, savory and impossible to put down.
