Bellanger was inspired by his mother's use of amaretto in her tiramisu and sought to make a less sweet, more authentic version. The almonds, specifically the prized "Filippo Cea" variety, are hand-picked in Puglia, Italy, and the unique production process for the Bianco involves crushing the unroasted nuts to create a natural, lactose-free, and vegan almond milk liqueur with half the sugar of traditional amarettos.
