Tasting Notes: The Iacopo Paolucci Frizzante Il Furioso is a sparkling wine made from a blend of 95% Grechetto, and 5% Moscato Giallo. This pet-nat has olfactory hints of baked bread due to the greater presence of yeasts in the bottle. It has a fine perlage, an intense aroma of white flowers, intense aromatic notes of ripe white-fleshed fruit, pear and peach, which mix with light fragrant notes of yeasts, and mask the bitter notes characteristic of the vines. Full in the mouth it has a pulpy yet velvety texture. Intense and persistent, the typical complexity of refermentation in the bottle stands out. The wine is characterized by an excellent ability to evolve over time.
