Tasting Notes: The Cantina Supersanum Negroamaro di Otranto Don Mose is fresh and vibrant with a dark stone fruit, fig, petrol and dried rose on the nose. On the palate, taste the tart crunchy fruit like pomegranate, cranberry, red currant and sour red cherry. This elegant wine is very versatile at the table.
Estate History: Cantina Supersanum is located in the town of Supersano in the province of Lecce. The Nutricato brothers personally take care of the entire process with four generations of experience. Zero chemicals are used in the vineyards maintaining a soil which is alive and producing the healthiest fruit possible. A macerated compost they make, called “compost tea” is used to fertilize the vineyard and protect the grapes from disease or mildew. Legumes, grasses and Mediterranean weeds grow between the vines. In the cellar there are no additives and the winemaking is done according to lunar cycles.
Don Mosè refers to the old hilltop vineyard where the grapes are sourced. The altitude creates a swing of temperature from day to night perfect for even ripening. The harvest is done by hand, the baskets are carried to the cellar where bunches are destemmed, pressed and left to macerate for 3 days. Due to the day heat of the south they must control the temperature during fermentation. The wine is then decanted and racked into steel tanks where and aged on its lees for 5 months and an additional 6 months in bottle. Only 1,400 bottles are made. For best drinking please bring the wine to a cool temperature of 59 degrees and give it some air for an hour plus prior to drinking.
