Estate History: For four generations, the Boeri family - nicknamed ROI - has dedicated itself to sharing the flavors of the Ligurian coast by making products with their famed Taggiasca olives.
Giuseppe Boeri began his production of olive oil in the late 1800s when he built his own stone press olive mill from wood and stones in his native Liguria. Located in Valle Argentina, the tradition of olive cultivation here dates back to Roman times. The olive trees in the valley are surrounded by Mediterranean scrubs, chestnut trees, and wild herbs. Along with the salty Mediterranean breeze, the surrounding terroir adds to the creation of olives of the highest quality. Sweet and mild, Taggiasca olives are small in size and a reddish-brown color.
Paolo Boeri is the current head of production, where they use the same olive mill his great-great grandfather built centuries ago. During a fateful meeting with Davide Pinto, a restaurateur based in Turin, the idea of Taggiasco was born.
